Papaya (Pawpaw) Mango Sunrise Smoothie (Vegan)
Preparation Time: 15 minutes
You will need:
Equipment
- Blender
- Measuring cups
- Drinking glasses
Ingredients:
- 2 cups of cubed ripe mango
- 1 cup ripe cubed papaya (pawpaw)
- 1 cup orange juice
- 1 cup coconut milk
- 6-8 Ice cubes
Instructions:
- Combine the mango cubes, papaya cube, orange juice, coconut milk into the container of the blender. (Be sure to keep your fingers away from the ana sharp blades and have adult help you).
- Blend at high speed for about 1 minute of until smooth and creamy.
- Fill drinking glasses with ice cubes.
- Pour smoothie into the glasses over ice cubes.
- Serve and enjoy. Remember to share!
Hint: If you do not have fresh ripe mangos and papaya, frozen partially thawed ripe mangoes and papaya can be used instead.
Chicken and Pineapple Salad Cups
Preparation Time: 15 minutes
You will need:

- Measuring cups
- Measuring spoons
- Large bowl
- Spoon for mixing
- 8-ounce cups
Ingredients:
- 2 ½ cup mayonnaise
- ¼ cup plain yogurt
- ½ cup fresh pineapple chunks
- 1 teaspoon oregano
- 1 teaspoon lemon juice
- 16 ounces (1 pound) of cooked chicken chopped into bite-size
- 1 tablespoon olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ cup shredded carrot
- 1 cup kale and baby spinach leaves blend
Instructions:
1. In a large bowl, mix mayonnaise, plain yogurt, pineapple, oregano, lemon
juice, chicken, olive oil, garlic powder, onion powder and carrots with a large
spoon until all ingredients are evenly coated.
2. Place a handful of baby spinach and kale leaves blend into 8-ounce cups.
3. Place ½ cup of chicken and pineapple salad mixture into the 8-ounce cups
containing the baby spinach and kale leaves blend.
4. Serve and enjoy. Remember to share!
